A Taste of the Sky: LARK Distillery Unveils King Island Rain, Tasmania’s Rarest Whisky Yet

Tasmania has long been revered as the birthplace of Australia’s finest single malt whisky, but with its newest release, LARK Distillery has turned the sky itself into an ingredient. King Island Rain, the fifth expression in the acclaimed Wilderness Collection, is an extraordinary single cask bottling that captures the purity of Tasmania’s remote northern outpost.

Drawn from the windswept skies above King Island, the whisky marries Cloud Juice’s famously soft, low-mineral rainwater with the refined depth of an American bourbon cask, Cask #LD2539. The result is liquid poetry — silky, rich, and layered with nuance. On the nose, delicate guava and lychee mingle with the creaminess of crème anglaise, while the palate unfolds in waves of baked peach, spiced pear compote, and fennel seed. The finish lingers with toasted brioche, white chocolate, and nectarine zest, echoing the wild elegance of the island itself.

Just 307 bottles of King Island Rain were released, each priced at $650 AUD. Collectors and connoisseurs moved quickly, reflecting the success of earlier Wilderness bottlings like The Angel’s Cask, which sold out within hours. For those who missed the online drop, LARK will host an exclusive tasting event at The Still in Hobart on October 11, where the full Wilderness Collection can be experienced alongside bespoke dishes created by Chef Benjamin Co-Pavier.

King Island Rain is more than a whisky; it is a sensory memoir of untouched skies and pristine rainfall, distilled into one of the rarest bottlings in Australia’s whisky landscape. With its release, LARK not only honours the spirit of Tasmania’s wilderness but also sets the stage for the trilogy’s final chapter, Sea, arriving in 2026.
