The 2025 Tasmanian Sparkling, crafted from the winery’s Tamar Valley vineyard, has just been introduced as the newest member of the acclaimed Tasmanian Series, joining a Pinot Noir nouveau, Reserve Pinot Noir and Riesling.
Cool-climate precision defines this debut sparkling. A refined 50/50 blend of Pinot Noir and Chardonnay, the wine was handpicked, whole-bunch pressed, and matured briefly on lees to enhance depth while preserving freshness. The result is as vibrant as the island itself: a bouquet of red apple, citrus blossom and lemon zest unfolds into a crisp palate of green apple, citrus and a whisper of strawberry, carried by fine, persistent bubbles.
Senior Winemaker Sarah Burvill described Tasmania as offering the ideal stage for sparkling wine, with pristine fruit, natural acidity and a sense of place impossible to replicate elsewhere. The 2025 release channels these traits with purity, finesse and a celebratory spirit that feels perfectly timed for the season.
With just 1,600 dozen produced, the sparkling arrives in streamlined packaging with a modern edge, foregoing the traditional hood for a sleek, contemporary look that mirrors Bird in Hand’s forward-facing philosophy. At $30 AUD per 750ml bottle, it balances accessibility with craftsmanship, making it a standout addition to the Tasmanian Series.
The launch coincides with Bird in Hand’s growing footprint across Tasmania, including the newly secured hospitality lease at Hobart’s Royal Tasmanian Botanical Gardens. This expansion, set to include a Tasting Room, restaurant and immersive experiences by late 2025, promises to anchor Bird in Hand even more deeply in the region’s cultural and culinary landscape.
