Two Bottles. One Philosophy. Bird in Hand’s Nest Egg Wines Set a New Benchmark in Luxury Australian Winemaking

A cult winery from the Adelaide Hills is making waves again. This season, Bird in Hand unveiled two extraordinary new releases under its revered Nest Egg range: the 2023 Nest Egg Chardonnay and—for the first time ever—the 2022 Nest Egg Syrah. Produced only in standout vintages, each bottle is individually numbered, exquisitely packaged, and released in extremely limited quantities.

Known for transforming cool-climate grapes into collectible expressions of elegance and depth, the Nest Egg collection is the pinnacle of Bird in Hand’s winemaking philosophy. Crafted with precision and intent, these wines reflect not only the terroir of Adelaide Hills but also the meticulous craftsmanship behind every bottle.

The 2023 Nest Egg Chardonnay (AUD $85, shop here) was sourced from three premium vineyards including the estate’s Woodside site. Whole-bunch pressed and aged in French oak—half of which was new—it underwent wild fermentation and regular bâtonnage, creating layered texture and depth. Notes of nectarine, yellow peach, honeysuckle, and pink grapefruit unfold over bright acidity and an elegant, drawn-out finish. Only 2,400 bottles exist.

The real collector’s item this year is the debut of the 2022 Nest Egg Syrah (AUD $99, available here). Aged 16 months in tight-grained French oak and created from four distinct Syrah clones, this wine is already being called one of the most exciting releases of the season. Aromas of violet, black pepper, dark chocolate and herbal spice mingle with blackberry and blueberry, finishing with poised acidity and fine-grained tannins. The result is power, elegance, and remarkable aging potential through to 2037.

Both wines are vegan-friendly and reflect Bird in Hand’s broader ethos of thoughtful winemaking, sustainability, and site-driven character. From vineyard to cellar door, Bird in Hand has become a benchmark for Australia’s premium wine and luxury experience scene—one that spans hospitality, art, and design as much as viticulture.
