Tasmania’s whisky vanguard returns with a statement in shadow: Dark Lark 2025, the bold single malt crafted for moments that begin after the sun goes down. Inspired by the elemental drama of the Bay of Fires, where the coastline glows crimson at dusk, this limited edition invites drinkers to lean into the darker hours—where stories unfold, sparks ignite, and creativity comes alive.
Distilled at LARK’s Bothwell facility and matured in a complex combination of port, bourbon, sherry, PX, and muscat casks, the 2025 release is rich with nuance. Tasting notes reveal a hedonistic sweep of papaya, maple-glazed almonds, and espresso gelato, deepening into berry compote, buttery shortbread, and sticky fig pudding, before settling on a decadent finish of spice-poached pear and toasted marzipan. It’s a dram made for night rituals and fireside reflection.
Dark Lark 2025 also inspires three signature cocktails that explore its dusk-to-midnight mood. The Golden Hour pairs Oloroso sherry, ginger ale, and bitters in a highball designed to open the evening with a burst of spice and warmth. Amber Glow takes on a lighter elegance—pear and honey cordial laced with champagne and grapes, creating a crisp, radiant profile under starlight. Meanwhile, the Velvet Ritual leans into texture and intrigue, blending ruby grapefruit, egg white and a float of red wine for a luxurious twist on the whisky sour.
This edition isn’t just about flavour—it’s about atmosphere. “It’s a whisky made for when the sun goes down,” says Master Blender Chris Thomson, “whether you’re gathered at home, out in the city, or by a fire beneath Tasmania’s stars.”
