As the light softens and gatherings move indoors, LARK Distillery invites whisky lovers to embrace the season with a curated collection of small-batch Tasmanian expressions—each crafted to elevate autumn entertaining with warmth, complexity and undeniable presence.

At the heart of the collection is the Classic Cask (RRP $200), based on the original recipe by founder Bill Lark. Double-distilled and matured in hand-selected small casks, it’s a benchmark single malt that speaks to both heritage and mastery—elegant, rich, and unmistakably Tasmanian.

For those seeking intensity, Classic Cask Strength (RRP $250) offers a more daring profile, with bold port cask influence and notes of dried fruit, butterscotch, and soft highland peat. Bottled at 58%, it’s a wild and complex dram that opens beautifully with a splash of water or over ice.

Adding a citrus-forward twist is the Chinotto Citrus Cask (RRP $200)—a sunlit single malt layered with candied citrus peel, cola spice and creamy malt. Finished in barrels seasoned with vibrant Chinotto, it’s a spirited departure from tradition, ideal for after-dinner conversation or early-evening cocktails.

Completing the set is the award-winning Symphony No.1 (RRP $150), crowned Australia’s Best Blended Malt three years running. Luscious and fruit-driven, it opens with mango, pineapple and vanilla before unfolding into baked Tasmanian apple and soft citrus. A balanced, expressive whisky for those who value finesse as much as flavour.
