Sullivans Cove’s Rare French Oak Whisky: A Tasmanian Love Letter to Pinot Noir

09 Apr 2025

In the misty heart of Tasmania, where the whispers of ancient forests meet the precision of modern craft, Sullivans Cove Distillery has unveiled two extraordinary single cask whiskies that redefine luxury in a bottle. Released last month, the Special Cask Editions No. 17 & 18—both aged seven years in French oak ex-Pinot Noir barriques—are a celebration of Tasmania’s terroir, marrying the distillery’s award-winning spirit with the soul of its world-class wine industry. Limited to just 379 and 365 bottles globally, these expressions are a fleeting chance to own liquid artistry.

Distillery Manager Heather Tillott describes the alchemy: “French oak imparts spice, while the ghost of Tasmanian Pinot Noir lingers in the char, adding layers of jammy richness and savoury depth.” The result? A symphony of contrasts. On the nose, dark fruits and truffle intertwine with violet and rose; the palate unfolds like a velvet tapestry of red berries, crème brûlée, and earthy mocha, while the finish resonates with dark chocolate and briny minerality. At 46.1% and 49.9% ABV, these whiskies defy their youth, offering complexity that belies their seven-year maturation.

Priced as rare treasures, these bottles sold out swiftly online at sullivanscove.com, a testament to Sullivans Cove’s legacy as Australia’s most decorated whisky distillery. For those who missed the release, the distillery’s ethos remains: exceptional single casks, crafted without compromise, where time bends to the whisky’s will.
