Sullivans Cove Distillery proudly presents the latest addition to its prestigious Old & Rare range—the 18-Year-Old American Oak Single Cask No TD0125. As one of the oldest Australian whiskies ever released, this exceptional expression is a true testament to the artistry of time and craftsmanship.

Distilled in August 2006 and bottled in September 2024, Single Cask No TD0125 has matured for an exceptional 18 years and one month in a 200L American oak ex-bourbon cask. The extended aging process has yielded only 212 bottles at 47.1% ABV. Each bottle is housed in a handcrafted solid oak presentation box and accompanied by a letter of authenticity, personally signed by Distillery Manager Heather Tillott, reinforcing its exclusivity and rarity.
On the nose, this whisky is soft and creamy, opening with the delicate sweetness of marshmallow, dried apricot, and brown sugar. Notes of milk chocolate and browned butter add a luscious richness, while subtle hints of melting cheddar and buttery crackers introduce a savory undertone. Pine nuts lend a textured, nutty complexity, enhanced by the fresh green accents of pine needles. Floral elements of daisies and jasmine bring a refined elegance, culminating in a nostalgic warmth reminiscent of sunlit beach sand.
The palate is both indulgent and vibrant, delivering an explosion of honey and buttery pastry flavors, reminiscent of a freshly baked Danish. Apple tea cake and toasted muesli add depth, while the whisky’s oily, waxy texture provides a luxuriously mouth-coating sensation. A delicate grainy, biscuity note ties everything together, creating a beautifully balanced and harmonious profile.
The finish is long and expressive, flowing gently yet leaving a lively impression on the palate.
